A Vietnamese specialty market and takeout shop has opened its second location in Spring, bringing salt-brined chicken, grilled dishes and imported snacks to the Stuebner Airline Road corridor.

Gà Ủ Muối Hoa Tiêu Houston, which also operates under the English name Chicken 68, opened at 17297 Stuebner Airline Road in early August, according to Community Impact, which reported the opening on Wednesday, Aug. 19. The shop functions as both a takeout restaurant and a specialty grocery, selling Vietnamese sauces, dried shrimp and packaged snacks alongside its prepared-food menu.

The business name translates roughly to "salt-brined chicken with Sichuan peppercorn," referring to a Vietnamese preparation of whole chicken marinated in salt and seasoned with hoa tiêu, or Sichuan peppercorn. The dish has grown popular in Vietnam and among Vietnamese communities abroad in recent years, and the brand has built its identity around the recipe.

The shop is already open and serving customers.

Beyond the signature chicken, the menu lists popcorn chicken, grilled chicken dishes and seafood. The market side of the operation stocks Vietnamese sauces, dried shrimp and other imported snacks, giving shoppers a place to pick up specialty ingredients without a trip to a larger Asian grocery.

The Spring location is the brand's second. The original Gà Ủ Muối Hoa Tiêu Houston operates at 11602 Bellaire Blvd. in Houston's Little Saigon neighborhood near Alief, where it is open 9 a.m. to 8 p.m. daily. Hours for the new Spring location have not been publicly posted.

The dual concept, part restaurant and part market, sets the shop apart from a standard takeout counter. Customers can order prepared dishes to go or browse shelves for pantry staples tied to Vietnamese cooking.
