Buren Bakery, the Puerto Rican bakery in Old Town Spring, is adding a second location on Gentry Street with a larger indoor dining area and new menu items.
Owner Alexandra Astacio announced the expansion within the same shopping center where the original bakery operates, as first reported by Community Impact. An opening date has not been set.
The new spot will give customers something the original location lacks: a full indoor dining space. Community Impact reported the second bakery will offer an area where visitors can sit down and eat, a practical upgrade for a shop that has drawn a steady following since opening in June 2024.
Astacio, a Puerto Rico native, said she felt compelled to learn how to bake her own bread after moving to the Spring area and realizing there was no authentic Puerto Rican bread nearby. In Puerto Rico, freshly baked bread in the morning is a daily custom, she told Community Impact in an Aug. 26 profile.
Before opening the bakery, Astacio left a corporate career and built a customer base selling baked goods at The Woodlands Farmer Market. She later established Buren Bakery in Old Town Spring, adding to the historic area's mix of small businesses.
Each morning, Astacio and her family arrive before the shop opens to prepare scratch-made pastries. The dough goes through an 11- to 20-hour fermentation process, according to Community Impact.
The menu features Puerto Rican staples. Pan Sobao is a traditional Caribbean white bread often paired with coffee. Quesitos are puff pastries filled with cream cheese and finished with simple syrup. Mallorcas are enriched yeast rolls topped with powdered sugar.
The bakery also serves coffee imported from Puerto Rico and coquito lattes. The drink is inspired by the island's traditional holiday beverage made with coconut milk, cream of coconut and warm spices.
The second location will bring new menu items, though Astacio has not said what those will be. No timeline for the Gentry Street opening has been announced.
